With the last holiday of summer fast approaching, our better-for-you recipe is a slimmed down Creamy Potato Salad. Tossing potatoes with a little good vinegar while they are still warm infuses them with flavor. Capers, gherkins, and a touch of anchovy give this old-fashioned salad a piquant finish, while red bell pepper and celery give it an appealing crunch. (A typical 1/2 cup serving of creamy potato salad has almost 250 calories and 20 grams of fat. This pared down version is 119 calories and 5 grams of fat.) The salad will keep, covered, in the refrigerator for up to two days.
